The Parker Pundit says: The Falcon is a great concept, but it lacks completeness. I've eaten there a few times. I enjoyed the food, but the second time there the service wasn't too hot, which was unacceptable given it was a Sunday night and there were only a couple tables occupied. The food tastes fresh and the sweet potato puree is nice (usually hard to find elsewhere). The beer is fresh and for a mini micro-brewery is very well made. The soft pretzel appetizer is really nice (I don't know who got it from whom, but the soft pretzel appetizer is my favorite at Coopersmith's in Old Town in Fort Collins). Falcon is worth a try, but don't expect a lot of ambiance. Do expect good, wholesome food, and (hopefully my one experience being an exception) attentive service.
